This grand, slow-cooked masterpiece utilizes the extra-long grains, rich natural aroma, and superior separation of SOG Classic Biryani Rice to create a dining experience fit for royalty. Unlike quick-fix recipes, this traditional Awadhi style uses a fragrant meat stock (yakhni) to infuse deep flavor directly into every single grain.
Ingredients List
For the Rice (Yakhni Rice Boiling):
SOG Classic Biryani Rice: 750g (soaked for 30 minutes)
Water: 4-5 liters
Whole Aromatics: 4 green cardamoms, 3 black cardamoms, 5 cloves, 2-inch cinnamon stick, 1 star anise, 2 bay leaves
Shahi Jeera (Caraway seeds): 1 tsp
Ghee: 1 tbsp
Salt: To taste (water should taste like sea water)
For the Mutton Yakhni & Gravy:
Tender Mutton: 1 kg (bone-in preferred for deep flavor)
Yogurt (Dahi): 1.5 cups (whisked smooth)
Ghee / Mustard Oil: 1 cup
Onions: 4 large (finely sliced for golden brown birista)
Ginger-Garlic Paste: 3 tbsp
Yakhni Pot Spices (tied in a muslin cloth): 2 tbsp fennel seeds (saunf), 2 tbsp coriander seeds, 1 chopped onion, 4 cloves of garlic
Finishing Spices: 1.5 tsp homemade garam masala, 1/2 tsp green cardamom powder
Aroma & Garnishes: Saffron strands soaked in 1/4 cup warm milk, 2 tbsp kewra water, 1 tbsp rose water, fresh mint and coriander leaves.
Step-by-Step Preparation Method
Step 1: Crafting the Golden Brown Birista
Heat ghee in a deep heavy-bottomed handi or pot. Add the sliced onions and fry on medium-high heat, stirring constantly, until they turn an even, golden-brown color.
Remove half of the fried onions for final layering and garnishing. Keep the remaining half in the pot for the gravy base.
Step 2: Preparing the Mutton Stock (Yakhni Base)
In the same pot with the remaining fried onions, add the ginger-garlic paste and sauté for 2 minutes until the raw aroma disappears.
Add the mutton pieces and sear them well on high heat for 5 to 7 minutes until the color changes.
Drop in the muslin cloth pouch containing fennel seeds, coriander seeds, chopped onion, and garlic. Add 3 cups of water, cover tightly, and let it simmer on low-medium heat until the mutton is 80% tender and rich stock is formed.
Remove the muslin spice pouch, squeeze out all flavors into the gravy, and stir in the whisked yogurt along with garam masala. Simmer for another 10 minutes until a rich, cohesive korma base is achieved.
Step 3: Boiling the SOG Classic Biryani Rice to 70% Perfection
In a separate massive stockpot, bring 4-5 liters of water to a rolling boil.
Add the whole aromatics, shahi jeera, salt, and 1 tablespoon of ghee.
Drain the soaked SOG Classic Biryani Rice and gently slide it into the boiling water.
Cook the rice strictly until it is 70% cooked (parboiled with a slight bite remaining in the core). Drain the water immediately through a large colander, spreading the extra-long grains gently so they do not break.
Step 4: The Royal Layering (Dum Setup)
In your heavy-bottomed biryani pot containing the warm mutton korma base, layer half of the parboiled SOG Classic Biryani Rice evenly over the meat.
Sprinkle half of the reserved fried onions, chopped mint, coriander leaves, a drizzle of saffron-infused milk, kewra water, and a spoonful of pure ghee.
Add the remaining parboiled rice to create the final top layer. Repeat the garnishing on top: remaining birista, herbs, saffron milk, kewra water, rose water, and a final ring of ghee along the edges.
Step 5: Sealed Dum Cooking (The Final Magic)
Seal the pot tightly. You can use a traditional dough seal (attah parda) around the lid or a heavy tight-fitting lid with a damp cloth underneath to lock in all steam and aromas.
Place the pot on a heavy tawa (griddle) over high heat for 5 minutes to build initial steam, then lower the flame to the absolute minimum (dum).
Let it cook undisturbed for 25 to 30 minutes.
Turn off the heat and let it rest for 10 minutes before opening the seal so the extra-long grains settle into their ultimate fluffy, non-sticky texture.
